Copycat "Swig" Sugar Cookies



Okay, so where I live we don't exactly have a Swig.  The closest restaurant even is a couple towns away, about a 5 or 10 minute drive.  That town has two restaurants - a hole in the wall cafe, and a fast food joint.  The fast food place offers a whole selection from burgers, to tacos, to pizza.

One night my husband and I wanted to go out to eat, but we didn't want to make the 30 minute drive to the closest main city, but we figured we could handle the short drive to this fast food restaurant.  He ordered his usual burger, fries and a shake.  I'm not too big on fried foods, so I ordered a burrito platter.  For dessert I ordered a sugar cookie.  My husband calls them boring...I call them irresistible!

The cookie was identical to what I know to be a "Swig" sugar cookie.  And let me tell you - it was the BEST sugar cookie I have had in a very long time.  Every time I drove by this place on my way home from the gym for the next month I would crave one.  I'm proud to say that I never gave into the temptation, however (gotta lose the baby flab!)

My husband attends a monthly book club, and the most recent book was one that he got to pick out.  He chose Alice in Wonderland.  Whoever picks the book is also in charge of the treat.  So, he asked me if I could make some cookies that say "Eat Me" on them, and some drinks with "drink me".  He said "maybe you could even make those sugar cookies you really like..?"

Um...an open invitation by my husband to make (so called "boring") sugar cookies?!  I'll be darned.   So, I made them, and they turned out to be absolutely divine.  Just as good as that cookie I've been craving for the last month :)




"Swig" Sugar Cookies
Ingredients:
1 cup butter, softened
1 1/4 cups sugar
3/4 cup powdered sugar
3/4 cup oil
2 eggs
2 Tbs. water
5 1/2 cups flour
1/2 tsp. baking soda
1/2 tsp. cream of tarter
1 tsp. salt

for frosting:
1/2 cup butter, softened
3/4 cup sour cream
1/4 cup milk
1 tsp. salt
2 lb pkg powdered sugar
1-2 drops red food coloring

Directions:
1. Cream together butter, sugars, oil, eggs, and water.
2. Mix together dry ingredients.  Add to wet mixture 1 cup at a time until a soft dough forms.
3. Roll into large balls (golf ball size or bigger) and place 3 inches apart on an ungreased cookie sheet.
4. Mix together about 1/4 cup sugar and a dash of salt.  Dip the bottom of a drinking glass in the sugar mixture and use it to press down the cookies slightly.  A rough lip should form.
5. Bake at 350 for 8 minutes.  Remove from cookie sheet immediately and place on a cooling rack.  Allow to cool completely before frosting.

for frosting:
1. Mix together butter, sour cream, milk and salt.
2. Slowly add powdered sugar until desired consistency is reached (about the entire bag).  If too much powdered sugar is added, just add a little bit of milk.
3. Add 1 or 2 drops red food coloring and mix well.
4. Frost cookies and enjoy!
